Following the extensive refurbishment of two units my client is looking to appoint a sous chef to assist the Head Chef. The units are branded to attract the local and tourist markets and will have locally sourced produce and season variations on the menu. Lunchtime and evening menus will vary and we ideally will require a chef who can create menus from fresh produce and utilise local and client grown vegetables. This is an exciting new post and will appeal to a competent sous or head seeking a new and rewarding challenge. Employed direct you will support by an extensive management team and be encouraged to grown with the business. Organised and methodical in approach you will have a hands on approach and enjoy setting up a new brigade and kitchen. Accountabilities are
To ensure that all menus are constantly updated, paying special attention to seasonal availability. To ensure that all menus are correctly calculated to ensure maximum gross profit. To ensure that all staff are constantly trained to effect good portion control and pleasing presentation of dishes. To ensure that sufficient stocks of all materials are being kept and stored under the correct conditions.
To liaise with management daily regarding special requirements, VIPs functions, etc. To ensure that all statutory hygiene requirements are diligently followed. To ensure that maintenance problems are promptly reported. To ensure that attendance registers are kept daily and that any absenteeism is reported to management without delay. To ensure that all documents are passed to management immediately for processing. To ensure that all staff are dressed correctly to satisfy statutory requirements as well as enhancing the image of the establishment. To constantly update your knowledge and skills for the good of the establishment. To assist with regular stocktakes as and when required.
You will be qualified to NVQ level 2 and hold a basic food hygiene certificate.
